Thyme In The Country occupies five acres of meadow, pond and garden six miles east of Hudson, in the farm country of Columbia County. The property centres on an 1880s farmhouse and offers three self-catering cottages, each converted from an existing outbuilding, an old milkhouse, a barn and a countryside hideaway, and furnished with antiques, natural fibres and hand-finished detail rather than standard-issue hotel fittings. Cottages have full or summer kitchens and wood or gas fireplaces, and two use chemical-free composting toilets in keeping with the owners' green practices. Guests share an in-ground pool, gardens that supply fresh produce, walking trails and resident goats and geese. Hudson's Warren Street galleries, antique shops, orchards and Hudson River towns are all close by.
